Brains has launched the SHACK, a new and exciting facility that will be used to nurture and develop chef talent and create career pathways within the food industry in Brains, and subsequently Wales.
The Skills Hub and Creative Kitchen (SHACK) is a new facility that will be used alongside developed coaching programmes that addresses the shortages of chefs in the hospitality industry. SHACK will develop the skills and knowledge of existing Brains chefs as well as offer new chefs a chance to get a start in the world of food. The SHACK will include training on food specific creations, equipment trials, menu launch training as well as essential kitchen techniques.
Alan Todd, Head of Food, said “Our Kitchen Skills & Safety Team, have created programmes that can take somebody from a pot washer all the way through to a Kitchen Manager within our teams. We are truly showing as a business what we are prepared to both invest in the future of our chefs and the food service we provide to our customers”.
Along with developing the skills of the chefs, SHACK will also play a key role in menu development to make sure the food offering at a Brains pub continually evolves and can suit every taste. This programme involves a 24 week process of category management, market research, recipe building, capacity management all rolled into an ongoing annual change plan, ensuring our food is at the forefront of the food and hospitality industry.
Matthew Lewis, Development Chef at SHACK, said “Brains put me on a training career path which has given me multiple qualifications and progressed me to my dream job developing the menus to make sure our customers have the best dining experience possible. Brains has become my family and I’m so excited to see SHACK develop the new generation of chefs within our pubs’.
The SHACK is based in Yard in Cardiff City Centre, in part of the Old Brewery that opened in 1713 and where we first started brewing in 1882. The SHACK is one of many new and exciting initiatives we have in store to make sure every experience for a customer in a Brains pub is of the highest quality.
